Riviera Relish

1 cup toasted pine nuts
1 cup sun dried tomato strips
8 oz jar of capers, rinsed
½ cup diced red onion
½ cup sliced black olives, rinsed
½ cup artichoke hearts, rinsed and chopped
¾ cup olive oil
1/8 cup red wine vinegar
1/8 cup chopped garlic
1 oz fresh chopped basil
Zest of 2 lemons
Juice of 2 lemons
1 ½ tsp dried oregano
1 ½ tsp salt free seasoning
Combine all ingredients in a large mixing bowl and mix well. Refrigerate over night to combine the flavors. Stir well before serving to evenly distribute the ingredients. Delicious on grilled fish!
